Now we try…vegan?

After chatting with a fantastic cardiologist here in LA who really highlighted the heart-healthy benefits of a vegan diet, I’ve decided it’s time to start exploring a more plant-based way of eating. As a woman of a certain age, I think it’s important to try and focus on these things!

This cardiologist really emphasized that vegans don’t have to worry about plaque buildup in their arteries since it mostly comes from eating animal products. With heart disease being the top killer of women, I was surprised to learn just how preventable it is! As someone who wants to enjoy a long, healthy life, this really hit home for me.

My doctor did say he still eats meat – but only once or twice.. a year! This is drastically different than the diet I’ve prescribed for myself thus far. I eat clean foods, but my most basic formula for meals has consistently been a protein + vegetable(s)+ grain (or some variation of this).

Will my children be interested/able/willing to undertake such a drastic change in our diets? I doubt it, but like most food changes in our household, I’ve found that gradual transitions that are not forced on anyone are the most successful. A perfect example is that my sassy 11-year old recently re-discovered she loves Zoodles (zucchini noodles) after watching a video of her toddler self delighting in them. Had I cooked and forced her to try Zoodles at 11 without her opportunity to lean into the food herself, I doubt very strongly she would have gotten even one bite down. I’m getting off topic though, I am excited to try and incorporate more plant based meals into our (my) diet, and allow my kids to adapt to what they enjoy as they try things.

I delight in a great cookbook, and there’s no better way to discover fantastic vegan recipes than by exploring some stunning new titles! SO, to indulge myself and encourage this change these are three that I’ve chosen to kick things off, and I’ve linked them on Amazon.
